Shrimp And Vegetable Pasta

This fresh and scrumptious, pasta dish is loaded with nutrients and makes a wholesome meal which is quick and simple to put together.

Ingredients Required

200 grams whole wheat spaghetti pasta
400 grams shrimp, cleaned and de-veined
1 red bell pepper, finely chopped
Thinly sliced asparagus
3 cloves of fresh garlic, finely chopped
1 cup fresh peas
3 tablespoons fresh lemon juice
1 1/2 cups of low fat plain yogurt
1/2 teaspoon freshly ground pepper
1/4 cup fresh parsley, finely chopped
1 tablespoon extra virgin olive oil
1/4 cup toasted pine nuts (optional)
Salt as per taste

Method And Preparation

1.?Add the spaghetti to a large pot of boiling water. Cook for about 2 minutes and add in the asparagus, peas, bell pepper and shrimp. Cook for another 3 to 4 minutes until the pasta and shrimp are cooked. Drain out the water and keep aside the pasta to cool.

2.?To make the dressing for the pasta, in a bowl mash the garlic and salt to a smooth paste, combine the lemon juice, parsley and yoghurt with this paste.

3.?Add the dressing to the pasta mixture and toss until it is well coated. To serve, garnish with pine nuts and fresh parsley and serve fresh.

4.?This dish serves about 4 persons and takes 30 minutes of cooking time.

Seafood Fettuccine

This pasta dish is healthy and nutritious, although a very popular restaurant dish, it can be easily re-created at home with simple ingredients.

Seafood Fettuccine

Ingredients Required

1 packet 0r 400 grams Fettuccine Pasta
1 1/2 tablespoons butter
1 cup spring onions, finely chopped
4 cloves of fresh garlic, minced
400 grams, shrimp, cleaned and de-veined
400 grams sea scallops
2 cups half and half (a concoction of half cream and half milk)
1/4 teaspoon freshly ground black pepper
200 grams crab meat, shelled
3/4 cup Parmesan cheese, grated
1 cup freshly chopped parsley
Salt as per taste

Method And Preparation

1.?Cook the pasta as per the instructions given on the packet. Keep aside to cool.

2.?In a non-stick pan melt the butter and add in the onions and garlic paste, saute until tender. Add the shrimp and scallops and cook until done.

3.?Add in the half and half followed by the seasoning and the crab meat, cook for 2 to 3 minutes. Reduce the heat and gradually add the cheese, stirring constantly. Remove from heat.

4.?In a large bowl combine the cooked ?pasta and the seafood mixture. Garnish with fresh parsley, grated cheese and serve hot.

5.?This dish serves up to 4 persons and takes about 25 to?30 minutes to prepare.
